Vegan Fluffy Pancakes

These pancakes are extra fluffy and taste amazing! 

  • Ingredients: 
    • 1 ripe banana
    • 2 cups all purpose flour
    • 1/4 cup sugar
    • 4 teaspoons baking powder
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 1/2 cup milk (I use Silk Protein Vanilla but any milk should work)
    • 1 Stick of vegan butter (I use earth balance)
    • 2 teaspoons vanilla extract 
    • 2 tbsp Cinnamon
    • Add-ins (optional) fruit, chocolate chips, nuts, etc. 
  • Directions:
    1. Blend the banana with 1 cup of the milk in a blender and set aside
    2. Add all the dry ingredients to a bowl and stir well, this is important because once the wet ingredients are mixed in you want to stir as little as possible to keep the air bubbles in.
    3. Add any add-ins you want like blueberries, chocolate chips, nuts, etc
    4. Add the wet ingredients and stir gently
    5. Heat your pan or griddle on low-medium heat
    6. Use the stick of butter to grease the pan
    7. Use a 1/4 cup measuring spoon and scoop the pancake batter onto the pan
    8. Flip when pancakes have risen a bit and are slightly brown on the edges

 

  • Tips:
    • For extra fluffy pancakes, don’t flip more than needed and don’t press on them with the spatula
    • Serve with peanut butter, fruit or syrup.
